Arrival of La Truffe Blanche d'Alba...

Is it a bird, is it a plane...is it a band??

Nope! Its a truffle...

The white Alba truffle is a species of fungus that is edible and very popular with truffle lovers the world over. Found mainly in Italy but more recently they have been discovered in France. However the decrease in harvests in recent years has caused a dramatic increase in its price...up to 5000 € per kg!

With its incomparable fragrance and very intense flavour, these truffles can vary in colour from white to streaked with pink, to grey and on some occasions near brown. The price of this wild truffle is proportional to its rarity. Best eaten raw, grated into thin slivers on bread, pasta or eggs.

But if you are living in Chamonix then you will be happy to know that the restaurant L'Impossible is serving up these tasty delights for you you to enjoy for yourself.
